Master Ishigaki-san is from Hokkaido and worked at ramen shops there for ten years. He then worked for three and a half years at the famous Osaka shop Kadoya Shokudou, before finally opening his own shop. The soup contains whole chickens from Kagoshima prefecture, chickens from Shiga prefecture, dried kombu, dried aji and dried saba (fish). Excellent miso ramen from Master Ishigaki-san from Hokkaido. The broth is made out of five types of miso and the noodles are hand-made in house.
I ordered extra tamago and chashu.
Top notch ramen.
