Recommended bowl: New school shoyu
This popular spot is run by master Tanaka-san, who previously trained at another well known ramen shop. He runs his establishment seriously, everything being in perfect order at all times. The clear chicken soup is simmered for at least seven hours, combined with katsuo oil and a dark shoyu tare blend containing gyokai. Topped with bamboo shoots, black pepper, low-temperature-cooked pork chashu and mitsuba leaves. Open since January 2018.
