Recommended bowl: Chicken & niboshi

New-school shop, focusing on some recent ramen trends with the direction of the menu. The main items are tori soba and niboshi soba, or chicken ramen and fish based ramen, respectively. There are a few different variations, such as the chicken based soup using only 'Satsuma Shamo' brand chickens from Kyushu and water. For those preferring some fish umami, a richer niboshi based double soup made with dried fish and animal bones is also on tap. Noodles are ordered via Kanno Seimen and contain whole wheat. Part of the INGS group, which operates a number of ramenya on the west side of Tokyo, including the well known Shinjuku shops, Hayashida, Housenka and Suzuran. Hanayama in Nakano open since April 2019.
