Recommended bowl: Noodle Lab Q style
Located inside Tokyo Station, this shop is produced by the famed Sapporo establishment Ramen Noodle Lab Q and master Hiraoka-san. Inspired by the menu at Q, the bowls here come with a clear soup made from three types of local chickens and pork, paired with shoyu tare containing five types of soy sauce. All ingredients are sourced domestically. Noodles supplied via Kokoro no Aji Shokuhin, based in Matsudo and run by the legendary Tomita-san. Open since August, 2020.
