This Jiro branch is run by master Miyamoto-san, who trained at the Jiro flagship in Mita, Tokyo. The bowl is pretty much what you would expect--Jiro style tonkotsu-shoyu soup, medium-high emulsification. Noodles house-made in the shop on the standard Ebisu brand machine.
