Recommended bowl: Jiro w/ green onions

This Jiro branch is run by master Miyamoto-san, who trained at the Jiro flagship in Mita, Tokyo. The bowl is pretty much what you would expect--Jiro style tonkotsu-shoyu soup, medium-high emulsification. Noodles house-made in the shop on the standard Ebisu brand machine. The recommended add-on topping at this branch is the Kujō brand negi (green onion). Garlic and vegetables on call. When this shop opened, the outside sign was typical Jiro yellow color, but in 2019, it was changed to white after being told to do so by the Kyoto government keeping with the local aesthetic. Open since 2017.
