Recommended bowl: Jiro Shimbashi Style
The master here is from Aomori prefecture, and previously worked as the shop manager of Ramen Jiro in Shimbashi, which is now closed. Mikaku open since 2018. Thick cut house-made noodles are made on a noodle machine inside the shop. You can order the size of your noodles when you pass your ticket to the master. The bowls are served with a dark salty, porky soup. The pork belly chashu is cut ultra thick. Extras like chopped garlic, veggies etc., available on request.
