Master Ooshiro-san specialises in niboshi ramen. He uses four types of small fish to create a broth clear, light but at the same time full of Umami.
The noodles are thin and al dente. He also adds some fresh cut onion to the bowl which creates an nice play on texture and acidity.

This highly ranked shop was opened by master Ooshiro-san, who previously worked at a top shop in Chiba. He uses four different types of niboshi in the soup here, and adds niboshi oil on top. No pork or chicken is used in the soup. Ramen, tsukemen, and extra orders of aedama noodles are available. Haru is the name of master Ooshiro-san’s daughter. This shop belongs to the Niboshi Kyouka Association, a group of ramen shops that specialize in niboshi.
