Recommended bowl: Yamagata style

Mangetsu is one of the more famous shops from Yamagata prefecture. This is their second shop, open since February 2020. The original shop in Yamagata opened in 1960, by master Saitō-san, whose son now runs the business. The name Mangetsu means full moon. Before Saitō-san originally opened the shop he saw a full moon, which is what inspired him. The clear soup is made from pork, chicken and multiple types of dried fish. The homemade wontons are the main feature, which are paper-thin and almost see-through. Noodles are made fresh at the head shop in Yamagata, but due to space restraints in Tokyo, here they are ordered via Taisei Shokuhin.
