Recommended bowl: Creamy tonkotsu gyokai
This large shop is accessible mainly by car, located off a main road in Ishikawa, not near any train station. The main offering is the nōkō niboshi soba-- a rich double soup made from tonkotsu (pork bones), chicken carcasses and niboshi (dried fish). Noodles are supplied by Kaga Shokuhin. Also on the menu is fried chicken karaage and limited seasonal bowls. Open since February 2016.
