Recommended bowl: Premium katsuo soup

Gyorai has been on the scene since 2010. The shop is led by Tsukada-san of the well known Bond of Hearts ramen group. On first impression, you might be struck by the row of coffee syphons behind the counter. But instead of coffee, katsuo bushi dashi (bonito flake soup stock) is simmering in those syphons. The soup here is shoyu-based with a strong katsuo element, finished with chicken oil. The noodles have bits of buckwheat in them and the bowl comes topped with katsuo foam. If you order the tokusei you get to choose from about ten different toppings that come served on a side plate.
