Gyorai has been on the scene since 2010. The shop is led by Tsukada-san of the well known Bond of Hearts ramen group. On first impression, you might be struck by the row of coffee syphons behind the counter. But instead of coffee, katsuo bushi dashi (bonito flake soup stock) is simmering in those syphons.
