Makotoya is rather highly ranked for a shop specializing in the down-n-dirty Yokohama IEKEI style of tonkotsu shoyu. The master here trained at Kawasakiya, another top IEKEI shop. Creamy, rich, porky tonkotsu soup, made with negi and topped with oil. Noodles are special-ordered from Sakai Seimen, which means that this shop has direct connections to Yoshimuraya, the OG’s of IEKEI. Unlike most shops in this genre, standard bowls don’t come with many toppings, just chashu and nori. The shop has never taken an interview. Open since 1996.
