Recommended bowl: Salt & ginger

Master Yamato Shibata trained at the well known shops Kururi and Gamushara before opening Mannish. This spot specializes in a light shio soup made with chicken and ginger from Kumamoto prefecture. The bowls are topped with tori chashu and carry a pleasant ginger aroma. Both ramen and tsukemen available; noodles courtesy of Mikawaya Seimen. Interesting ramen very close to Tokyo Station. They combine ginger and shio ramen. As the ginger seeps into the broth it changes the flavour. The chashu also tastes a little bit of ginger. If you are really into ginger, there is ginger vinegar which one can add to the broth.
