Ganko Ramen Kazen is run by master Tadahiro Yoshida-san, who trained at Ganko in Akihabara (since closed), which was originally run by his uncle. The Ganko family of shops stretches far and wide with a deep history, and as is customary at all locations, when a large beef bone is hung outside, it means the shop is open. The menu is varied, but the basic shoyu soup is beef bone based, containing pork bones, chicken, gyokai, vegetables and fruit. Noodles are house-made. Tare sauce and oil amounts are both adjustable when ordering. There is also a limited morning menu that usually sells out before 9am. Shop hours are 6am-2pm. Since 2016.
