Recommended bowl: Benten inspired

Inspired by the legendary Tokyo ramen shop Benten, master Wakabayashi-san quit his job as a salaryman and trained with the help of a friend before finally opening his own shop in December 2015. The bowls here are pure Benten-esque, with a Tokyo-style soup made from pork bones and feet, chicken bones, minced meat, dried fish and fragrant vegetables. The shoyu tare contains various types of soy sauce, as well as niboshi, kombu, dried flying fish and several other varieties of dried fish. The noodles are housemade, using a flour blend containing multiple strains of wheat. Just like Benten, customers have the choice of a shoyu-based ramen or tsukemen, with options for shio and/or spicy versions as well.
