Recommended bowl: Clear tonkotsu

Hailing from Fukuoka, Kyushu, Butasoba Tsukiya has seven branches and counting (as of early 2021), with the Nakasu Fukuokoka flagship open since 2018. This brand is actually the second brand under Shinasoba Tsukiya Fukuoka, another ramen shop based in Fukuoka since 2012. The soup here is 100% clear tonkotsu broth, with noodles shipped in from Kyushu via Hakata Seimen Dokoro. Diced chives and kabosu citrus on the side. Tokyo Hiroo location open since July 2020.
