Rich chicken soup consists of chicken skin and thigh meat. Noodles are house-made daily using nine grains including California quinoa, barley, oats and rye berries. Topped with ajitama, pork belly chashu, broccolini, fried burdock root, green onion, kale and pickled ginger.
