特製味噌らーめん / Tokusei Miso Ramen / Mendokoro Akimoto — Ichigao, Kanagawa

The soup uses a variety of ingredients including whole chickens, pork bones, katsuobushi, shellfish, onions, negi, garlic and ginger. Some of the flavored oils are said to be sweetened with apples and pineapple. Previously noodles were ordered from Mikawaya Seimen, whether that’s still the case cannot be confirmed. Recommended bowl: Katsuo & chicken

Akimoto-san trained at the famous ramen shops Keika, Junren, and Mutahiro, before opening his own spot. Both the shio and shoyu are worth trying, as are the additional wonton toppings. Mikawaya Seimen supplies the noodles. The soup is an umami-rich blend of chicken and katsuo. Fresh vegetable toppings. In addition to ramen, there is shoyu and shio tsukemen on the menu.
