Considered somewhat of a legendary shop in Fukuoka, Ikkyū ramen has seven branches overall, with six of them run by one family. This Kasuya branch, however, is independently operated by a sole proprietor not affiliated with the family. You can take photos of ramen, but no other photos are allowed inside the shop. The bowls served here can be considered Fukuoka style tonkotsu ramen, consisting of pure pork bone broth, shoyu tare and thin straight noodles. No kaedama (extra noodle) is available, so most customers order large size or rice on the side. Take-out ramen is available, with the soup served in empty glass shochu bottles. The shop turns down all magazine, TV and media offers, hence the reason it is still off-the-radar for non-locals.
