Recommended bowl: Ayu ramen

Open since 2002, this shop specializes in Ayu, or sweetfish, a type of freshwater fish native to East Asia. The original master here is from Gifu prefecture. The ayu fish used in the ramen are also sourced from Gifu, as are the special ordered noodles. The soup is a clear dashi of ayu, chicken and vegetables, paired with shio tare. There is also an option of getting a grilled whole, 2-3 hour-grilled ayu fish as a topping. Open since 2002.
