Jiro style at Ramen Jiro in Nakayama. Salty tonkotsu-shoyu soup, thick cut noodles house-made on the customary Ebisu brand noodle machine. Extra garlic, veggies, tare drizzle. This branch is known to have special topping options that sometimes rotate, for example kimchi (via ticket machine) and sesame wakame (free by request on garlic call). The master first trained at the Ramen Jiro Honten in Mita, then the Yokohama Kannai branch, followed by a stint at Hachioji Yaenkaido. Open since 2010.
