Traditional Kasaoka style ramen, which originated in the city of Kasaoka, Okayama prefecture. This type of ramen is made with chicken only-- the soup contains a base of chicken carcasses and shoyu tare, finished with chicken oil. No MSG. Instead of typical pork chashu, bowls are topped with 'kashiwa', aka stewed chicken chashu. Noodles are ordered via Marushin Mengyō, based in Kasaoka. Master Idehara-san trained at the shop Ikkyū, and now runs this one along with his wife. One of the highest ranked bowls in Kasaoka. Open since 2004.
