Recommended bowl: Niboshi w/ pork fat

Gamushara is the Niigata Tsubame-Sanjo-style ramen outpost from Hasanuma-san, master and producer of multiple ramen shops both in Tokyo and overseas. Hasanuma-san is from Niigata Prefecture, so this is kind of like comfort food for him. He used to serve this style at his head shop in Tokyo, but eventually opened a separate shop dedicated exclusively to his hometown favorite. Slightly fishy but clear niboshi soup with pork back fat, diced onions, and medium-width noodles. Open late.
