Recommended bowl: Thick but light
The soup at Takamatsu is thick but light, made from chicken carcasses and gyokai. Diners can opt for ramen or tsukemen, with a few variations to choose from. The tsukemen is recommended, served with a side of diced onions and sudachi citrus. Also don't hesitate to use the black shichimi pepper available on the counter. The noodles are ordered via the local Kyoto purveyor Teigaku, and contain whole wheat from Nagano Prefecture. Run by president Takamatsu-san, who runs four shops total in the group.
