Recommended bowl: Umami Explosion

This legendary tonkotsu gyokai tsukemen powerhouse was a pillar of the Saitama ramen scene, well known amongst ramen heads since it debuted in 2014. Unfortunately to most though was its remote location, far from any station and for the most part only accessible by car. Fear not, however, as the shop closed down and moved to the more convenient Tokyo suburb of Kita-Senju, reopening in October of 2019. The rich soup is made from pork leg bones, pig feet, minced pork, Daisen brand chickens and dried fish. The noodles are special ordered from the purveyor Kaikarou, using a special recipe exclusive to this shop. The noodles contain tapioca, and are served topped with toribushi (chicken flakes). Master Setoguchi-san was the first shop manager ever at the original Rokurinsha in Ōsaki, one of the most infamous ramen shops in modern day Tokyo. A legit, elite-level shop, one worth making the effort to visit.
