Recommended bowl: Hakodate shio

Shinano is a conveniently located Hakodate shop specializing in the classic local shio genre, but also offering a wide menu of different bowls. The house-recommended shio is served with a traditional clear broth made from chicken and pork, turned golden yellow from the welcome addition of rendered chicken oil. Noodles are supplied by Sagamiya, based in Sapporo. Shoyu, miso and spicy miso are also available, as well as fried gyoza. Since 2007.
