Recommended bowl: Pork jowls

One of the more famous shops in Kagoshima, serving up bowls of tonkotsu with signature pork jowl chashu. The soup is made from pork bones, chicken bones and seafood, simmered for 12 hours. Medium thick straight noodles are ordered via Ishimaru Shokuhin, with thin noodles available for kaedama refills. The signature chashu is made from pork cheeks and necks, and seems to melt into the soup. Master Nakazato-san trained at the famous Kagoshima shop Kokinta before opening here in 2003. Now with several branches in Kagoshima prefecture.
