A new-school style shop with a sleek, modern looking interior. The soup is made using chicken, pork, ham and gyokai. Shoyu ramen contains special brand shoyu from Shodoshima, Kagawa prefecture, which is made using wheat and whole soybeans. The semi spicy 'Karami Shoyu Ramen' is topped with an original house-made flavored oil utilizing chili peppers from Shimane prefecture. Bowls come with both pork and chicken chashu, and all ingredients used are domestically sourced. No MSG. Raw egg rice bowls with tsukidani (soy sauce-simmered fish) available on the side. Run by brothers, one of whom previously trained specializing in Japanese cuisine. Their father runs a soba shop. No photos allowed inside other than of the food. Since 2014.
