Recommended bowl: Frothy paitan soup

Shishimaru is a high level shop located just a few minutes walk from Nagoya station. There is a wide selection of bowls on the menu, including some containing ise ebi (Japanese spiny lobster), tantanmen, and the more traditional simple fish based shoyu. The recommended and most popular bowl is the paitan ramen, which contains a frothy, creamy soup made from pork bones, chicken bones and vegetables, combined with a Japanese style dashi broth made from kombu and six types of dried fish. Before being served, the master whips up each bowl of paitan soup with a handheld blender. The noodles are house-made using a blend of multiple varieties of Hokkaido wheat and Okinawa sea salt. Customers are encouraged to add garlic pepper oil (available as a condiment on the counter) midway through their bowl to add a new dynamic. All ingredients are sourced from within Japan. Open since July 2016.
