Recommended bowl: New school style

Nakago (tang) is the inner part of a Japanese sword handle, where the sword's master writes words of soul or passion. No one can see his written words once the handle is covered. In the same way, this shop's masters put their souls and passion into the bowls of ramen. A pork based soup with light shoyu or shio tare, with noodles supplied by the esteemed purveyor, Mikawaya Seimen. Extra care and effort go into the toppings for each bowl, including the use of aburi-chashu, carrot, purple onion, white wood ear mushrooms, kombu, fried tofu, leeks, daikon radish, and salmon roe. Open since July 2018.
