Recommended bowl: Handmade chūka soba
The recommended bowl is served with a clear soup made from chicken carcasses and pork bones, paired with a shoyu tare blend of six different kinds of soy sauce. No MSG. Noodles are handmade in the shop each day by master Nakamura-san, who trained at the Toride in Shibuya. The noodles contain four varieties of wheat, wonton skins also house-made. Nakamura-san happens to be close with master Higami-san of Hoshino Chūka Soba in Yokohama, whom he consulted for various advice before opening. Shio, paitan, specials also available. Open since 2016.
