This well known shop has spawned three different ramen brands spread out across a handful of shops in Osaka. The noodles are from Umegae Seimen, made in Osaka. Master Shimada-san used to work at a Japanese Kappo restaurant for 22 years. After that he opened his own restaurant specializing in chicken. The soup here is made from chicken, several kinds of niboshi and kelp. Nama-shoyu and ayu fish sauce in the tare. A highly ranked shop on many ramen heads' hit-list.
