Recommended bowl: Original Hachioji style

Open since 1982, this legendary Hachioji shop was established by master Okamoto-san, the son of the original master from another legendary Hachioji shop, Tantan (open since 1961). The Hachioji style bowls here contain a clear chintan soup made from pork and vegetables. The shoyu tare recipe is kept secret, as well as the lard used to top off each bowl. At one time the noodles were sourced from local Hachioji purveyor Owariya Takii Seimenjo, but the company went out of business, so now they are ordered via Kanno Seimen. A famous shop in Hachioji, considered one of the original bowls of pure Hachioji style ramen.
