Here in deep Saitama is where you will find authentic Higashi-Ikebukuro Taishōken style tsukemen. The soup contains chicken, pork, gyokai and vegetables, served with shoyu tare. Ramen and tsukemen (mori soba) both on the menu. Noodles are homemade on the same type of noodle machine that the legendary Yamagishi-san used in Higashi-Ikebukuro. This shop is widely considered to be the only other shop in Japan to serve bowls that taste almost exactly the same as Yamagishi-san once served. Master Matsumoto-san first worked as a chef in Chinese cuisine, and then trained at Higashi-Ikebukuro Taishōken (under Yamagishi-san) for a year and a half. Open since 2003.
