Recommended bowl: Awesome vibes

This Chūka-style spot located in the Ishikawa countryside onsen area of Kaga has plenty of funk and character. The menu has plenty to choose from, including chūka soba, chashumen, omelet rice, and so on. The most popular menu items, however, come with the shop's signature shrimp topping, peeled and fried before being added. The house-recommended 'ebi umani soba' consists of a shoyu chicken and vegetable soup, served slightly ankake (starch-thickened) style. Shrimp fried rice also popular. A nostalgic shop, authentic and charming. Run by master Koike-san, who says the menu hasn't changed once since day one. Open over 20 years.
