- Gerhard Huber added a new meal Dinner at Hatou (波濤) at Hato (波濤)
Kashigiri at Hatou. Due to a cancellation we were the only guests. Great to have time to chat to the Taishō and his apprentice.
I still believe that he is producing some of the best and tastiest otsumami in Tokyo. For example his ayu, fired to perfection so it becomes equally crispy without loosing the required bitterness to make it great.

His nigiri skills are getting better and better., the chu toro and the aji being the stellar pieces of the evening.
Fantastic meal, looking forward to my next one at the end of this month.

The oyster dishes, slightly bigger, but still wonderful taste. The shame, as always served at room temperature, has this perfectly calibrated flavor with the yellow wine sauce adding some pleasant acidity.
Chef Calvert’s food is always focused, he is restrained in using ingredients and even colors on the plate, but all dishes are amazing compositions of taste, texture and flavor. This places will become a stable of the dining scene in Tokyo. One of the must go places, if you feel like having French food. Less

- Gerhard Huber added a new meal Lunch at Sushi Saito (鮨 さいとう) at Sushi Saitou (鮨 さいとう) with Tomoko Morikawa
Return to the Master.
For me, Saito-san’s nigiri are the best combination of shari and neta. His ostumami are always perfectly cooked, very seasonal and full of flavors.
I have been coming more and more frequently and now decided to up this even more. I will not regret it.
