Led by Chef Aitor Zabala, a protégé of Ferran Adrià, it reopened in 2024 in West Hollywood with a 14-seat intimate counter. Somni offers a 20-course modernist Spanish tasting menu, blending avant-garde techniques with seasonal Californian ingredients. The restaurant is still refining its offerings—Chef Aitor had to replace an old Oregon cow dish with Wagyu due to guest feedback about chewiness. While some dishes are not yet at the highest standard, the restaurant shows great potential. I can see it earning two stars, maybe not this year, but certainly in the coming years. Less

aithor_zabala is back at the second iteration of somnirestaurant and although it's early, only 2 weeks in, both the food and staff are already executing at a level rarely seen stateside.
As with the original, little is as simple as the names suggest and every bite is delicious. Surely people will balk at the price, but at a 1:1 chef to guest ratio and ingredients with execution like this in West Hollywood you get what you pay for.
Ferran Adrià just entered the building! However his name now is Aitor Zabala and the building is not Cala Montjoi but in Los Angeles.
This place is as close as it gets if you want to re-live an El Bulli meal. It is modernised, maybe a little less experimental but very very good.
A simple dish, which gets served in any cheap bar, pan con tomate y jamon, becomes a multilayered flavour explosion in your mouth. A peasant dish, five alubias caress your mouth as if they want to stay there.

This place is new and it will get better. Certainly one of the 3 star contenders in the new GM CA guide.
I will be back.
Long live El Bulli!! Less
Pictures of my dinner at Somni on 4/10/18.The new 10 seat chef counter in LA by chef Jose Andres and Aitor Zabala. One of the most beautiful food you will see this year.
