Last act to the second year of the annual Noma Trilogy.
No point of repeating the praises I have been singing in the past. This game season is my favourite act in 2019 (like the vegetable season last year).

One point I wanted to make now that I have been 7 times in 2 years at Noma.
My contribution to the long and emotional discussion about why Noma does not have 3 stars was always that there is a price to be paid for pushing yourself to the extent the Noma teams does. It creates sometimes dishes which do not connect. This is not a negative sentiment but a neutral observation. But the collateral damage is consistency.
This year this has changed. Especially in act 2 and 3 of this year.
So the only possible conclusion of this is, it is high time to elevate one of the most important restaurants on the last decade to three stars.
