I would have liked to report that this meal was fantastic but it wasn’t.

Many years ago, I had an unforgettable 9* collaboration meal between @restaurant_geranium x @azurmendi_atxa x @maaemo at an OAD event. Since then, I have been to Geranium and Azurmendi a few times already but still haven’t made it to Maaemo yet so we made it the main goal of this trip to Oslo.

First time visiting Maaemo, had high expectations and the restaurant delivered for the most part. Some highlights: the signature “oyster tradition” which is an oyster emulsion with mussel and dill sauce; Arctic char; spring lamb. Some dishes were a touch too salty and heavy on cream. Overall a nice experience and good wine service. •

The New Maaemo!
A dramatic set-up, double, maybe even triple height entrance. A Lounge with a wine cellar down below with an open fire place where one gets served the snacks. The dining room is also double height with four kitchen islands and can host up to 30 people. A beautiful place, well fitting to the beautiful food which gets produced there.
Esben Holmboe Bang always impressed me with his gentle and precise cooking. I still remember the Arctic Cod, steamed with salted butter as a benchmark... More

I've been a huge fan of Esben Holmboe Bang culinary world since the very first visit back in 2011. This was another stunning meal with many new dishes.

Ok, so all done now, been there, seen it, done it….loved it. Although 3 Michelin starred, I went with an open mind and bar a couple of aspects that might restrict some diners, I am pleased to report there is no doubt that this venue is at the highest levels of a restaurant experience you can have. After about 20h travel, we arrived in Oslo for the begining of our trip and Maaemo was the first stop. Maaemo is one of the two 3 Michelin stars restaurant in the Nordics and run by chef Esben Holmboe Bang. Maaemo means « mother earth » and focused on local produce and revisited traditional dishes. Second stop on the Scandinavian Triple Crown Tour (Fäviken, Maaemo and Geranium).
The team there continues to produce outstanding food with a extraordinary execution and best ever products.
The Arctic Cod, steamed with salted butter was just sublime. This is as good as it gets.
