Uni at Tenzushi Kyomachi in Kitakyushu. Check earlier posts about types of uni and what makes them special. I will share more information about Isao Amano‘s approach in the next videos.

Finally got to visit Tenzushi, flew all the way from Tokyo just for this. Very different style from edomae, beautifully constructed nigiri, a lot of sweet and sour flavors and unusual combinations. Definitely an interesting experience but the lunch was rather short, nice to visit if you’re in the area but wasn’t really worth the round trip from Tokyo. •

The master in top form, slowly handing over the reins to hs son, who did 4 out of the 15 nigiris.

The legend. Always good and a great change from Edomae style sushi. Some of his pieces are simply pieces of art. A great place to visit a few times a year.

I have not really gotten into the Kyushu-mae style of sushi, but this place really hits the high notes and is the institution for anywhere West of Biwa-ko for me so far. No use of nikiri, and focusing on freshness rather than anything else. The akaika squid nigiri was unlike anything else. Amano-san is also really hospitable and I'm excited to go back again soon.

Back at the friendly giant of Kyushu style sushi. The quality of his fish, the creativity of his design and the perfection of his execution is unparalleled. The Kyushu style invented by his father especially suits me as it replaces mostly shou with citrus flavours.

5th meal after the Master came back from his eye surgery in April 2018.
UNBEATABLE!
The combination of the neta and the shari, boosted by some of the best Japanese citrus fruits creates a flavour which is unparalleled.

Back at the Master.

The style of sushi at Tenzushi is Kyushu. Benefitting from it’s location between three seas, Amano San uses citrus and salt to compliment the extremely fresh seafood rather than ageing the fish and servings with a soy reduction in the Edomae style.
When I visited in November we were extremely lucky to be treated to a private sitting at the 5 seat counter of this renowned establishment. Apart from the delicious sushi, the thing I really remember is Amano-San’s warmth and generosity with his precious... More

The master! Third meal of this year, different fish, same quality.

Amano-san composition is unparalleled. His ability to keep your palate fresh and interested in alternating between sweet, sour and salty, between textures is stunning.

His focus while chatting casually with his guest and showing genuine interest in them is mesmerising.

Lunch at Tenzushi, the arguably most prominent proponent of Kyushu style sushi.
The sushi at Tenzushi is served with kabosu and sudachi (Japanese citrus), which is different from Edo-mae Sushi that serves sushi with soy sauce.
The Chef uses ingredients mainly from the seas around Kyushu, and each sushi is made one by one with care for a superior product. In order to focus on the taste of the sushi, he doesn't offer liquor or an omakase option.
However, besides the impeccable sushi which by... More
