The sushi made with kabosu and salt was a completely new experience for me, and I was overwhelmed the entire time. Both the presentation and taste were top-notch.Since it was my first visit, the chef kindly explained the order of the dishes and the ingredients, which made for a truly delightful experience. Finally got to visit Tenzushi, flew all the way from Tokyo just for this. Very different style from edomae, beautifully constructed nigiri, a lot of sweet and sour flavors and unusual combinations. Definitely an interesting experience but the lunch was rather short, nice to visit if you’re in the area but wasn’t really worth the round trip from Tokyo. •

I have not really gotten into the Kyushu-mae style of sushi, but this place really hits the high notes and is the institution for anywhere West of Biwa-ko for me so far. No use of nikiri, and focusing on freshness rather than anything else. The akaika squid nigiri was unlike anything else. Amano-san is also really hospitable and I'm excited to go back again soon.

Back at the friendly giant of Kyushu style sushi. The quality of his fish, the creativity of his design and the perfection of his execution is unparalleled. The Kyushu style invented by his father especially suits me as it replaces mostly shou with citrus flavours.

The style of sushi at Tenzushi is Kyushu. Benefitting from it’s location between three seas, Amano San uses citrus and salt to compliment the extremely fresh seafood rather than ageing the fish and servings with a soy reduction in the Edomae style.

Amano-san composition is unparalleled. His ability to keep your palate fresh and interested in alternating between sweet, sour and salty, between textures is stunning.

Lunch at Tenzushi, the arguably most prominent proponent of Kyushu style sushi.
The sushi at Tenzushi is served with kabosu and sudachi (Japanese citrus), which is different from Edo-mae Sushi that serves sushi with soy sauce.
