I finally visited the renowned Sushi Gyoten in Fukuoka, a place I had wanted to try for a long time.Every piece of sushi was of exceptional quality, but the tuna was truly breathtaking! I didn’t think about what was the best or how it compared to other places; rather, I felt that there was no basis for comparison at all. This made me hesitant to make a reservation myself.However, with the opening of their new location, I was encouraged by friends to give it a try, so I nervously reached out to make a reservation after a long time. To my surprise, they remembered me despite my absence and graciously said, "Since we have a long history, we’ll make an exception for you." I finally visited after 8 years! ❤️✨✨The previous location had a charming and unique atmosphere, and each time I visited, the sushi offerings and the overall ambiance had evolved. This time, the exterior of the new building was stunning, showcasing Sushi Gyoten's innovative sense of design in its interior as well. ✨✨From the young age of opening, the owner has put in extraordinary effort, and it seems they have successfully graduated from the Michelin Hall of Fame after many years. Congratulations! ( ^人^ ) With their unique ideas and excellent sourcing, I believe they will continue to amaze many customers.The quality of the dishes and the way the sushi was served had changed from the previous relaxed pace of conversation with customers, where it felt like the owner was enjoying the interactions. Now, the service was faster and more efficient, with a greater quantity of sushi being served. Yet, they still managed to engage each customer in conversation, ensuring that no one felt neglected. Their attention to detail and care was truly remarkable, and I was in awe of their serious dedication.As the owner mentioned, they don’t want to bore their customers, and their conversational skills were indeed impressive—truly top-notch! Additionally, they quickly provided precise instructions to the staff, noticing the pace at which customers were enjoying their drinks and attending to every detail swiftly. I was once again reminded that this level of service and grace is unparalleled in Japan. ✨✨✨Thank you for the wonderful service, thoughtfulness, and exceptional cuisine! I successfully registered as a member this time, and I believe I’ll be able to post photos of the interior next time. Without photos of the dishes, my memories tend to fade a bit. (-。-; I will write more details about the dishes and sushi next time!Previously, the owner’s kimono and tasuki (sash) were distinctive and lovely ❤️, but since becoming a members-only establishment, they mentioned that wearing a kimono makes it difficult to move quickly while working. While I appreciated the previous slow, flowing movements, they explained that the change was necessary to keep customers engaged and to serve them more efficiently.I worry about the owner’s incredible dedication and how far they will continue to evolve. I had the opportunity to visit Sushi Gyoten for the first time in my life. It has relocated and is now a fully membership-based establishment. I was invited by a member and attended the latter part of the session. Photography is prohibited for non-members. While there are fewer sushi restaurants that prepare rice in front of you, this one still does. I thoroughly enjoyed a variety of dishes, from tuna to eel.

Visit at 3 star shushiya Gyoten. A private buy out and therefore maybe not representative as it was loaded with a load of tuna cuts.
I am not a great fan of it but I think from time to time is just great to indulge into aged tuna which just melts in your mouth.
The young Chef really knows to use his knives and is very proud of his sourcing and preparations. The rice is seasoned with Akazu (赤酢)cooked more the al dented but to the point where it still feels grainy on the palate.

The baked shirako was also a highlight as it was baked so the outside became a nice crust which added a texture element to it.
Is this one of the best suhsiya in Japan, as it is one of two 3 star sushi restaurants in Japan, I don’t know, but it was definitely worth a visit. Less
3-Star sushi place in Fukuoka. The young Chef is know for his attitude and somewhat disrespect for the tradition.
The cooked part of the meal was definitely subpar but the sushi excellent.
