Born and Bred—a name that pops up whenever my friends return from Seoul. I’m not to miss this eatery if I’m ever in the city. A dear friend managed to squeeze me in for a meal, and here I am tucking into its beef. OMG, what an educational feast—each cut was grilled at a different temperature to yield a distinct texture and taste. Returning to Born & Bred after 7 years, now at their expanded location. This was another speakeasy experience with Chef Min taking care of us, and portioning so that we don't get killed with food.
For me, this remains the temple of Hanwoo that beef lovers should worship at.

The last savory dish of the night, the 18th cut of beef and the 25 items (if you included things such as the egg roll, oyster, fish etc) was Ram-don / jjapaguri, a noodle dish made with mixing two types of instant noodles Jjapaghetti and Neoguri now popularised by the Oscar winning movie Parasite by director Bong Joon-ho. We were served with melon, grape and ice cream with traditional Korean sweets at the end.

Overall I think you can see Mr Sang put a lot of efforts in creating an omakase that included extensive experience of Hanwoo in different cuts and ways of preparation. Also a sense of exclusivity since it was a private dining and only available when you book out the whole basement area (hence min of 10-12 ppl) and priced around 250-350 USD per person (should be the most expensive Hanwoo beef bbq experience in Seoul).

For me having tried mostly small traditional Korean bbq restaurants, this was a good study on how beef owners try to push the potential of Hanwoo beef in more high end and modern way of preparation and presentation and customer experience.

It was also for me to see how premium Hanwoo compare with other beef in other countries. And I think In the end no matter what type of beef from different countries they all have their own strengths and limitations. For Hanwoo, with my own experience, I still think their most iconic galbi and also their skirt (harami) are the most delicious cuts when prepared the most traditional way (straightforward grilling with sauce).
