A huge surprise in Tokyo: amazing Japanese ingredients with Thai spices and cooking styles! Really innovative and great ‘thaiseki’ (Thai kaiseki)

🐟 Yamayuki tuna (used by high-end sushiyas, like Saito), matsutake, truffles, fugu (tiger blowfish), black abalone, and other great products!

And a really great French wine pairing!

Thai Japanese fusion restaurant from one of the most prolific Foodies and Tabelog reviewers in Japan. Himself being Thai he takes inspiration from a Thai dish and collaborates with his Japanese chef to create something similar but with Japanese ingredients and techniques.
The result is a surprisingly delicious fusion of the two cuisines with bold flavors but restrained spice lawyers.
Excellent place which deservedly got a Tabelog Bronze award in its first year.

Ginza Bia 美会 1st visit — tucked away in a small back alley in Ginza, casual, almost a little quirky setting, fusion of Thai spices and Japanese ingredients showing the owner’s Thai roots. Uni with lemongrass sauce was an interesting combination. The curry rice was tasty but on the sweet side. Overall interesting concept and good quality food, though I wish the dishes were spicier. •
