I was invited by an acquaintance to visit Naz in Karuizawa.It was simply amazing. The explanations of the dishes revealed incredibly intricate (and quite hard to remember) preparation methods, but every bite was truly delicious.The price, including alcohol pairing, was around JPY 80,000, which is impressive.I heard they are not accepting new reservations, so I'm not sure when I'll have the chance to visit again, but it was a wonderful experience.

This restaurant is located about 30 minutes by car from Karuizawa Station. This was my first visit since it relocated about 150 meters from its previous location in June 2025. 軽井沢の深く静かな空気に包まれる『レストラン ナズ』。地元・軽井沢内での移転を経て、料理・空間・体験のすべてがひとつ上のフェーズへと昇華された印象。建築士である奥様とともに設計された新たな空間は、料理の世界観と歩調を合わせるように、静かで凛とした佇まいを見せる。そこに立ち上がるのは、テロワールの記憶を料理に写し取るという意思。風土、季節、時間。目に見えないそれらを、五感で捉え直す場だ。

その思想の象徴とも言えるのが、信州サーモンを主軸に据えた二皿のスペシャリテだ。ひとつは、3年半かけて育てられたサーモンをドライエイジングでさらに凝縮し、発酵蕪とトマトのソースを重ねた構成。香り、酸、旨味が滑らかに折り重なり、時間の蓄積をひと口の中で感じさせる。対となるのは、3年熟成の奈良漬を添えたシンプルな一皿。構成は極限まで抑えられているが、サーモンの脂と奈良漬の酸が香りとして響き合い、余韻には静かな深みが残る。ひとつは構築、もうひとつは削ぎ落とし。異なる手法で、同じ素材の輪郭を浮かび上がらせていた。

冒頭に登場する一皿にして、すでにこのコースの語り口が明確に現れていた。中心にあるのは「里芋」。高温のフリットではなく、じっくりと低温で揚げ、ねっとりとした質感と芯に残る水分を巧みにコントロールしている。そこに巻かれるのは、1年間白カビで熟成させた峰村牛の生ハム。脂の甘みと熟成香が芋の滋味と静かに重なり、香りの中心には黒胡椒が淡く漂う。過不足のない構成が、すでに『ナズ』らしさを物語る。合わせるペアリングは、苺をトマトウォーターのように抽出した液体。甘さを削ぎ落とし、高麗人参や根菜のようなニュアンスを滲ませている。口の中に残る土のような余韻が、芋と... More

8.鮎の春巻き

◉長野県の鮎
◉万願寺唐辛子
◉鮎の肝と魚醤

お皿にご登場して来たのが何とコレが
鮎料理?
とは一目では分からなかった鮎の春巻きとなって
半身ずつに春巻きがカットされてのお目見えです。
で、鮎の周りは万願寺唐辛子を素揚げし柔らかく
火を入れた万願寺を鮎の肝と鮎の魚醤で味付けし
鮎周りに巻いております。
巻いた万願寺を通して鮎の中にゆっくりと火が
入って来て鮎に当たる為とても綺麗な火の入り。
ゆ〜っくりジワジワァンと火が鮎に入ってきて
春巻きの中でもじっくり蒸されて身がフワッと
膨らんで来てる感じの火加減の施し方が繊細で
鮎を労りつつ火入れの妙技で鮎の持ち味を全て
活かし切っており春巻きを噛んでもパリィンと
皮は響かずサクッと優しく裂けて静かに破れる
そんな感じの破砕感なのです。
此処が味噌であくまで鮎と万願寺が主役なので
春巻きの皮の厚みで破砕感が走りこの春巻きの
美味さを持って行かれ無い様に薄く巻いてます。
なので
この鮎の春巻きを食べると直感致しますが鮎が
めちゃくちゃフワトロな感じの肉質感で咀嚼に
とても瑞々しい美味さを直接感じます。
鮎の旨みの直後に訪れる万願寺がかなり鮎との
インパクトを共鳴し合い肝の珍味が鮎の純白な
身から滲む淡麗な旨みと鮮烈なコントラストを
作り出して絶妙なバランスに包まれた味わいを
深掘りしておりました。

9.子鹿のフィレ肉のカツレツ

猟師と直取引なので子鹿を〆て半日で届く鮮度感を
楽しめる肉料理となります。
本日使う部位はフィレ肉となりますのでこの部位は
肉質が敏感なので2〜3日経ってしまうと真っ黒に
なってしまいます。
なのでやはり水分が潤沢に残る鮮度感が美味しさの
秘訣で新鮮な子鹿フィレ肉の淡くシルキーな美味さ
これを味わって頂きたいとのお話です。
その柔らかく新鮮な子鹿をカツレツに仕上げご用意
となります。

お料理は子鹿のフィレ肉に

細やかなパン粉を塗して不純物を取り除いた
純度の高い澄ましバターを纏わせて高温にて
一気に揚げた後に寝かせてて余熱の火により
ジワジワと火をフィレ肉の繊維に入れており
肉質をとても柔らかいものに仕上げてます。

鹿肉カツレツの上には焦がしたクリームに
練り辛子と季節のお茄子を加えたソースが
注がれて甘辛がフィレ肉の旨みを刺激する。
最後の仕上げのアクセントに地元軽井沢の
カシスを火入れしたものとカシスの木から
作ったオイルで香り付けしたカシスの葉を
チュイル仕立てで添えて味と香りを麗しく
整えております。
子鹿のカツレツは水分をある程度中に残して
保湿された状態で火を入れている為か肉質は
柔らかいと言うより肉感が非常に優雅に解け
堪らないほどの肉汁からの極上の旨み見せて
而も歯にフワンと着地しつつ優しくハラリと
自然に崩れて行く。
鹿肉と言う動物的な匂ひや嫌味が一切無くて
咀嚼が食べ疲れない優雅な踊り見せる逸品の
美味しさに舌も頭も追いついて行かない程で
全く斯様な極上子鹿カツレツを頂けて最高の
メインディッシュの口福を頂きました。

10.お食事

◉お米と野沢菜と蒸し鮑の和えご飯

表面に野沢菜パウダーを纏ったご飯のお姿から
想像も出来ないほどの旨みが芳醇に募ってます。
一口野沢菜ご飯をお口に含んでみますと吃驚の
お米自体の美味しさがレベチの旨みを感じます。

お料理は幻のお米とも言われてます『はぜかけの
五郎兵衛米』を蒸して半年間発酵させた野沢菜と
佐渡の黒鮑で和えたお料理となっております。

はぜかけ米は80%は蒸してその後お水で鮑と
一緒にお粥っぽく炊いて発酵させた野沢菜の
パウダーとサッと和えて仕上げにパウダーを
振り掛けてます。
一口を頂く前にヒトサラが目の前に届いた瞬間
野沢菜パウダーからの良い匂ひにうっとりです。

野沢菜ご飯を食べてみましたら滅茶感動の
ご飯で野沢菜パウダーから口内にお海苔に
似た磯の香りが漂う感じでご飯を咀嚼して
その味覚は品の良い酸味が発酵した野沢菜
パウダーから戯れて来ます。

はぜかけ米の甘味に野沢菜の旨みと蒸し鮑の
膨よかな旨みも手伝って見事な味覚の調和が
奏でる激うまご飯を頂いて食後は暫し余韻が
消えず野沢菜ご飯の芳醇な旨みを思い起こし
舌が酔うほどの美味に身を任せておりました。

11.黒米アイス

信州の黒米を柔らかく炊いて牛乳と一緒に
練り上げたアイスとなっております。
アイスの上はコーンフラワーにラベンダーの
香り付けで魅惑的なアイスの装いを完成。
下には黒米を香ばしくカラッと揚げたものを
潜ませて食感を楽しんで頂ける様にご配慮し
食感も香りも甘味も麗しく整えられた甘味と
なっておりました。

one of the most sought after tables where chef serves a unique menu based on fermented dishes after his training in noma and kadeau in copenhagen, as well as a breif stint in italy. his menu in his small restaurant up in karuizawa revolves around light and refreshing flavours, and i truly enjoyed his winter menu as a refreshing break from washoku.

This was one of my favourite meals at this place to date. Back when winter was just moving into spring, it was also one of the widest repertoires of flavours and cooking so far. The peas, the pasta, unagi and hotaru ika were on point, with a good balance against the looming spring vegetables.. it is always nice to try the core dishes like the aged salmon which has varying taste and texture through the seasons. A true destination restaurant in Kagurazaka. The Italian label is probably clearly wrong as the whole food feels more Nordic than Italian. Unsurprisingly as the chef worked in a Pizza restaurant in Tokyo and then worked in Copenhagen to refine his skills.
The cooking is very precise, the flavours restrained and the execution prefect.

Restaurant Naz レストラン ナズ 1st visit — a new restaurant in Karuizawa. Innovative cuisine combining Italian, Nordic and Japanese elements, with quite a few fermented and dry aged ingredients. Overall a very good experience, nice space and interesting wine pairing. Easy access from Tokyo so definitely worth the trip. •

Outstanding meal at Naz a couple of months ago. Italian, Nordic and French cuisine combined with precision execution, beautiful plating amidst a cozy location. Wine list has a more natural focus but pairings work well with all the dishes. Quite a journey to get there as it is located just on the outskirts of Karuizawa, but extremely worthwhile.
