Celebrating 10 years of @odetterestaurant, the restaurant reopened its doors late last year after 3 months of renovation! The dining room and kitchen have been revamped, but the core DNA of what made Odette one of the best restaurants in Singapore has not changed. The cooking by @chef_julien is still impeccable - French at its core but with increasing Asian influence. The new Crab Contrast dish featuring a steamed crab with Bearnaise sauce is one such example - paired with a chili crab fried bun as a tribute to the classic Singaporean dish. The food was complemented with the fantastic pairing by @lesleyliu1012 - winner of 2026 Asia’s Best Sommelier Award!

It’s my third time visiting Odette in its near decade-long run, and it’s a charmed one. The food at this storied institution has never been better, the signatures tinkered (well) to abandon. Which means that the brilliance of that smoked egg dish extends beyond the show — a crate of eggs with their tops cut-off, Arpege-style, nested in smoke that dramatically unfurls like it would at a Superbowl half-time show — to the details: the light-as-a-cloud potato espuma, the meuniere, and the little... It’s my third time visiting Odette in its near decade-long run, and it’s a charmed one. The food at this storied institution has never been better, the signatures tinkered (well) to abandon. Which means that the brilliance of that smoked egg dish extends beyond the show — a crate of eggs with their tops cut-off, Arpege-style, nested in smoke that dramatically unfurls like it would at a Superbowl half-time show — to the details: the light-as-a-cloud potato espuma, the meuniere, and the little jewels of Chorizo Iberico.
The smoked egg delivers as much pleasure as all the other dishes, and they reflect the quiet sensibilities of a chef, Julien Royer, who finds beauty in subtlety. During a recent meal, there was a crystalline pork broth cradling tender, sweet abalone and foie-gras with a texture unlike silken al-dente tofu. A scallop crudo that didn’t need the acid because the dill and horseradish was already enough. A toothfish that didn’t need the salt because you’d lose the contrast between the fish and the squid that crowns it.
I don’t know why a steak knife is placed alongside the dish; if you press down on the fish with the base of a spoon, the oils from the meat surrenders beautifully into a sauce made with lovage and probably a dozen other ingredients.
And I don’t know why it’s taken me this long — 3 years — to revisit what is now my favorite three-Michelin starred restaurant in Singapore. Till next time, and hopefully soon. Less
Grand Finale at @odetterestaurant - Kampot Pepper Crusted Pigeon Tender, juicy pigeon with a peppery crust, served with black garlic and Amaretto. Served with a fluffy meat bun, perfect for mopping up the delicious sauce.
And a modern ‘Sobacha Mille-Feuille’ with earthy Sobacha (buckwheat tea), Vanuatu vanilla, and caramel to end!

Then in 2021, he opened Wing, a dedicated Chinese restaurant of his own interpretation. It became his platform to showcase modern Chinese culture to the world. 👏🏼 to this philosophy and concept. I told myself, next time I go to HK, I have to eat at @wingrestaurant_hk! I was just about to plan my HK trip when the pandemic happened. I totally forgot that I wanted to try Wing, until so many friends raved so much about it. Last month, I managed to snag a rsvp with the help of a friend.

You feel like a king when you’re dining at Wing, the service is so good & spot on. I opted to go with the seasonal menu and added a crispy chicken dish. The dish on this menu that blew me away was the fried cheongfan with 🦀. The fried cheongfan is pillowy with a caramelized outer layer, making it crispy but still fluffy. Yumminess and 👏🏼 to the expert skill involved in the cooking. The next dish that I really liked was the threadfin ma yau, mandarin peel and super-delicious fermented black bean sauce.
Not all creations push the boundaries of Chinese culture. Still, just a modern contemporary makeover of the look of the dish and how it is presented is worthy of note. And more kudos for the makeover’s openness and creativity. His Mignardises (bite-sized desserts) are simple yet stunning and delicious. I love his black sesame mochi and cream donut. Besides modernizing the cooking and presentation, he also paired his menu with not only tea, but sparkling tea, as well as alcohol. I really love his selection of sparkling tea. If anyone knows where to get this sparkling tea in 🇮🇩/ 🇸🇬? LMK. I think I found a drink that can replace 🍾 for me.

Great meal at Odette, the newly minted 3 star place in Singapore. I do like the classic but subtle cuisines of Julien Roy. The kitchen preformed flawless even though the boss was in Hongkong attending his restaurant there.
