in stockholm, sweden (june’24)

the reason for our trip to stockholm was for frantzen, they attempt to fuse nordic ingredients with a japanese approach, but the meal simply didn’t reach my expectations, and everything here was unbearably salty. wine list was also unacceptably expensive, considering the wine lottery in scandi, they’re out for blood lol. very standard service expected of a restaurant of this calibre, didn’t feel like they took an extra step to make our experience better as... Frantzén - Stockholm

The Stockholm food scene is booming. Capital of Sweden, a country that was previously not particularly known for its food, the city is a true gastronomic hotspot ready to be explored. And at the helm of everything is @restaurantfrantzen, a 3 Michellin starred restaurant that both deserves each and every star and at the same time is much more than any accolade could possibly show. Also where I had one of the best meals of my life.

Once you ring the entrance bell... More

It was the best Wagyu beef I have ever had in Europe, in Michelin and other restaurants.
Wagyu A5 is basically too fatty and smells like fat, and often leaves more fat than flavor in the mouth (especially in Michelin restaurants in Europe). However, the combination of this cooking method and oxtail was excellent.
I felt that they have a delicate enough palate, technique and understanding to use Japanese ingredients. It was a wonderful course menu.

The only dish that was disappointing was the... More

Return visit at Fratzen. Masterful as ever, very tasty and delicious. Some new dishes, of course the classics.
The turbot with N25 special Frantzen caviar a dish so good that it is surely a benchmark for other turbots.

Another visit to one of my favourite restaurants on the planet @restaurantfrantzen . This was not a straightforward visit as several months ago, when I was first planning this trip, I thought well what could possibly follow a back to back visit to some of Copenhagen’s finest restaurants? Frantzén of course. So I sent out a few feelers to a few UK chefs that I’m friendly with (who tolerate me😬) to see if they would be interested in a group... More

Frantzén part III. I wanted to wait some time for the euphoria of a perfect meal to wear off, otherwise I’d just post a gushing string of superlatives. Needless to say, all of the accolades are deserved. They have built something truly magical. Utterly transportive from the moment you walk in the door, to when you find yourself on a rooftop terrace at 1am sipping coffee and eating hot madelines, chatting with the kitchen. Essential, delicious, important. Massive thank you to @carl_frosterud... More

Fourth meal in the new place. Transition of menus from winter to spring, we therefore were subject to some of the new dishes.
As always, great food. Perfectly calibrated flavours, executed flawlessly with great easy.

The third visit at Frantzén’s in 2018. I really love that place, an outstanding restaurant concept with outstanding hosts, a really exceptional wine list and delicious dishes. The atmosphere, the people, and of course also the well designed and created dishes make this place to be One of the hotspots around the globe and definitely the hottest spot in Europe at the moment. I already booked two times for 2019, as I enjoy this experience so much.

Another visit to Frantzén in Stockholm.

This places evolved even further over the last 18 months and is now certainly one of the best restaurants in the West.
The sourcing of the products is surely a great base, but the refinement and creativity of Björn's dishes have reached a level which is hard to surpass.

His chawanmushi would make any highly awarded Japanese Chef proud. The autumn lamb cannot be made better, the flavours, the texture and the composition of the dish is as good as... More

Bjorn Frantzen received his 3rd Michelin star about a month before I dined there. This was after he closed and relocated his restaurant in 2017 to what he describes as, "The old Frantzen times 10." Every detail of the restaurant is designed to enhance the overall experience. Enter a private elevator that plays music at the push of a button, a beautiful lounge area for champagne and appetizers, and a rooftop terrace where you can smoke Cuban cigars. In the main dining area, guests are seated... More

This is Frantzen in its old iteration at the previous cramped premises and it is interesting to look back two years and see how far they have come. I wonder did they think that just two years later they would be open in an incredibly spacious and luxurious new property and by one of only a very few resataurants in the world to be awarded a 3* michelin straight away. You can see there are a couple of dishes that still remain years later on the new Frantzen menu. French toast and a dessert looks familiar... More
