The sourcing of the products is surely a great base, but the refinement and creativity of Björn's dishes have reached a level which is hard to surpass.
His chawanmushi would make any highly awarded Japanese Chef proud. The autumn lamb cannot be made better, the flavours, the texture and the composition of the dish is as good as it gets.
Overall an absolute highlight in find dining and a certain must for me for an annual visit, at a minimum!
