I had the Matsutake and Unagi course at Hiyama, a place I had been eager to visit for a long time. The flavor of the Matsutake was simply on another level—it's impossible to describe it with words like deep or rich. I apologize for my lack of vocabulary. It was so delicious that I was in ecstasy. I forgot to take photos, but they have a separate wine list with many high-end options. It's a highly sought-after restaurant, but I definitely want to go back.

This was my fourth visit. Once again, I enjoyed the course featuring matsutake mushrooms and sea eel. Although it was still early for matsutake, it was truly amazing. The chawanmushi (savory egg custard) was filled with 80% matsutake, and the ingredients in the dobinmushi (teapot soup) were also 80% matsutake. The best way to enjoy matsutake is definitely in tempura form. I savored the matsutake to my heart's content, and it was a blissful experience.

Finally made it to Hiyama! I never expected to enjoy matsutake mushrooms and sea eel in such a luxurious way; each dish was a delightful surprise! The attention to quality ingredients and the meticulous preparation were evident throughout the wonderful course. Although the price is on the higher side, the satisfaction it brings is well worth it. This is a restaurant I would love to visit again on a special occasion!

The atmosphere inside the restaurant doesn’t particularly exude luxury, and the staff have diverse hairstyles, which I appreciated. Although it’s an old establishment, this vibe made me feel very comfortable.As for the food, it was exceptional. Unbelievable matsuktake orgy. It started with a Matsutake chawanmushi and continued from there to the grand finale, the wagyu Matsutake shabushabu . The only non Matsutake dish was two pieces of a beautiful, really delicious tune, Akami and Otoro.
This place is one hour by Metro from the center of Tokyo but it is truly worth the journey.
