Every year, I visit Hiyama during the early Matsutake season! This time, we had a gathering of 9 people, each bringing delicious wine and champagne.■ Tabelog Award 2026 Silver Winner ■ Selected as one of the Top 100 Japanese Restaurants in the East by Tabelog 2025 ■ Tabelog rating at the time of visit: 4.43*Location: 2-6-8 Higashikawaguchi, Kawaguchi City, Saitama Prefecture *Access: 5-minute walk from Higashikawaguchi Station on the Saitama Rapid Railway LineWhat we enjoyed: ● Chawanmushi (savory egg custard) with Matsutake from Iwate ● Tokyo Shin Ginkgo, Kombu-cured Sea Bream, and Hamo (pike eel) rolled sushi ● Fried Matsutake from Iwate ● Dobin Mushi (teapot steamed Matsutake) ● Grilled Matsutake ● Matsutake Rice ● DessertAs for my impressions after the meal, it always starts with the chawanmushi, where I am overwhelmed by the amount of Matsutake! (laughs) First-timers are always amazed by the incredible quantity and deliciousness of the Matsutake! (laughs)And I absolutely love the Dobin Mushi! The broth, infused with Matsutake essence, is on a different level compared to what you find elsewhere—it's incredibly rich and delicious, leaving me in ecstasy! The Dobin Mushi here is truly exceptional!Another favorite of mine is the Fried Matsutake! The original sauce is so tasty that I can't get enough of it!For the Grilled Matsutake, each person gets 3 pieces! As the chef at Hiyama carefully grills them, the Matsutake essence oozes out, making my mouth water just watching! When I eat it, the juiciness and perfect saltiness are absolutely delightful!
